Kat and I are taking it in turns to create menus for the week and ordering the food from Tesco online (bit of a luxury that one, saves a lot of time though so scores high on the work/life balance scale ;) ). Kat had a very successful first week creating delights such as:
Mushroom and Leffe (Belgium beer) pie - This consisted of a lovely golden puff pastry casing, hugging a very tasty combination of tender mushroom, onion and Leffe-based gravy. This was served with top-notch mash and two veg.
Creamy Lemon Puy Lentils - The sexy little queen of lentils: the puy, was lifted to new heights with a tomato, spring onion, mustard and creme fraiche sauce, and the added zing of lemon. This was served with a perfectly poached egg resting on the bed of lentils. Yum!
Chilled beetroot soup with creamed goat's cheese - Another triumph! Actually it was very very filling too, and tasted lovely cold.
Last night, I made Courgette fritters with Chilli Jam and ciabatta (deep-fried veg and spicy jam - those dirty robbing bas'tards!). This involved quite a bit of grating - I was going to make a carrot salad too but my thumb hurt! - but apart from that was easy. We also have some jam (more like chutney) left over too, I was a bit skeptical as it sounded weird but it were right lov-ly!
